Dr. Mike's Power Cookie
Instructions
  1. Heat oven to 350 degrees.
  2. Beat together applesauce, almond paste, flaxseed oil, Truvia, and agave nectar.
  3. Beat in egg and vanilla. Mix well.
  4. Add flour, baking soda, cinnamon, salt, pepper and whey powder. Beat thoroughly.
  5. Stir in oats, cherries and almonds. Mix well.
  6. Divide dough so that you have 18 cookies.
  7. Drop the batter by large tablespoons onto a cookie sheet that has been sprayed with vegetable cooking spray.
  8. Flatten each cookie with the back of a spoon.
  9. Bake 16 to 18 minutes or until brown.
  10. Remove from oven. Cool and store in a plastic container.
Recipe Notes

Substitutions:

  • Use 1 tsp of almond extract for the almond paste.
  • Replace flaxseed oil with olive oil
  • Add your own favorite dried fruit and/or nut combination!
